8 cups fresh blackberries, washed
2 cups coconut sugar
1 tablespoon lemon zest
the juice of one lemon
In a large pot, mix blackberries, coconut sugar and lemon juice. Bring to a boil over medium heat and simmer 30-40 minutes or until thickened to a jam-like consistency. Stir in lemon zest. Cool the jam for at least 30 minutes and spoon into jars. Jars can be kept in the fridge for up to 3 weeks. If you would like to can the jam, follow the canning directions here.
